Tom Lubbe is a New Zealander who grew up in South Africa and worked on vineyards there, which enabled him to gain experience in the area of organic winemaking. He was interested in working with Mediterranean varietals and secured an internship in the village of Calce for 3 months. In 2003, Tom established his own small bio-dynamic vineyard, near the village of Calce, above Perpignan in the Languedoc-Roussillon region. The vineyard is worked naturally without any chemical aids and uses various plant fermentations to nourish the clay-limestone and schist soil.
Tom works with many of the traditional Catalan varieties such as: Carignan, Grenache, Macabeu and Mourvedre. The vines are low yielding, which gives the wines a high degree of concentration and minerality.
